During breakfast, Arabs routinely eat zaatar with yogurt, crème cheese, goat cheese and pita with ample olive oil. Fresh zaatar is used to flavor many types of Middle Eastern cuisine. The bread pastry, borek is often stuffed with many ingredients including zaatar. One can also make a salad with fresh zaatar leaves. Zaatar alone does not provide much aroma but when it is combined with finely chopped onions, fresh thyme, lemon juice, garlic, salt and olive oil, the taste can be awesome. In Oman and Yemen, zaatar is also added to beverages, especially herbal tea. The Arabs and Jewish settlers believe that zaatar also has mind-altering properties if consumed in high amount. Arab children are often encouraged to eat zaatar before exams as there is a belief that it leads to improved attention and concentration. Zaatar leaves or the dried powder is now available in most food store in North America. It is relatively cheap and once opened should be stored in an airtight container to retain its aroma. The dried leaves can last for a long time.
